Introduction :
Ponceau 4R (E124 food additive), is a colorant of synthetic origin, which has a crimson color. The E124 colorant opens the whole palette of tints: when yellow (E102, E104) or orange (E110) colorants are added, the brown color is obtained, and when it is mixed with a blue Ponceau 4R colorant gives purple color.
